Our ethos and values are built with family as the foundation, with this we have created a culture of respect, passion and excellence.

Our team has been hand-picked from operations, to suppliers and our support team, we aim to deliver an ambiance that imbues our stores with the feeling of returning home.

Dan Rudolph

Executive Head Chef

Born and raised in Auckland, New Zealand, Dan Rudolph brings a wealth of culinary experience, both locally & internationally in various hatted & Michelin starred establishments.

 

Describing his style of cuisine as modern Australian with contemporary Asian & European influences, the refined menu he has curated for The Butcher's Block reflects this, his utilisation of Australia’s premium seasonal produce ensures we deliver satisfaction to our guests from a taste & texture perspective.

Of Cambodian heritage Kanharith started cooking at 17 and has worked in many hatted restaurants throughout Sydney, Kandi brings a lot of passion, enthusiasm and energy to her role hence her work nickname “Pocket Rocket”. Her last role was as a sous chef at Quay Restaurant.

Manfred is of German descent, starting his career as a young chef at the age of sixteen. He has worked all over the world in Hatted and Michelin starred restaurants and has not only brought his experience to the block, but passion and knowledge.
