Our ethos and values are built with family as the foundation, with this we have created a culture of respect, passion and excellence.

Our team has been hand-picked from operations, to suppliers and our support team, we aim to deliver an ambiance that imbues our stores with the feeling of returning home.

Dan Rudolph

Executive Head Chef

Born and raised in Auckland, New Zealand, Dan Rudolph brings a wealth of culinary experience, both locally & internationally in various hatted & Michelin starred establishments.

 

Describing his style of cuisine as modern Australian with contemporary Asian & European influences, the refined menu he has curated for The Butcher's Block reflects this, his utilisation of Australia’s premium seasonal produce ensures we deliver satisfaction to our guests from a taste & texture perspective.

Lawrence Pang

Head Chef Parramatta

Malaysian in origin, Lawrence has held senior positions at 3 hat level (Momofuku Seiobo, Quay), as well as earning a chef’s hat as Head Chef of Bathers Pavilion Restaurant back in 2015.

Lawrence assists in overseeing the groups many venues from a menu and operational standpoint.

Born in Korea, Paul commenced his culinary training in his homeland before moving to Sydney in 2005 to increase his food knowledge. After working in many top establishments in Sydney and Hamilton Island, he commenced as Head Chef at Steel bar and grill attracting a loyal following for his modern take on Mediterranean cuisine. He Joined the team September 2018.

Oliver Hale

Head Chef Wahroonga

English born Oliver trained in Michelin starred restaurants in his native country before crossing the ditch in 2011 and working in various hatted establishments & café’s in Sydney. Joining the team in 2017 as Head Chef, Oliver is also a professional MMA fighter.
